Tuscan Mattone 2-Piece Terra Cotta Press

While traveling in northern Italy, we discovered a wonderfully simple way of cooking exquisitely flavored chicken. When we visited the ristorante kitchen, we discovered that this ingenious two-part terra cotta press was the secret. Suitable for use on a gas or electric stovetop, up to 350°F in the oven, this round press will hold a small chicken split down the back. Slight irregularities in the finish are normal.
